Monday: Pan Seared Fish and Tomatoes


  • 1/2 tablespoon (grapeseed) oil
  • 1 ( about 2 oz) fish fillet
  • 1/4 tablespoon salt
  • 1/4 tablespoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup halved tomatoes
  • 1/2 teaspoon chopped garlic



  • Lemon Juice
  • Parsley



In a large saute pan over medium-high heat, add the oil. Season the fish with salt and pepper and add to the pan. Sear the fish for 3 to 4 minutes on each side. (add the lemon juice to the fish now if you have some).

Remove the fish from the pan to a serving platter. Add the olive oil to the pan and stir in the tomatoes and the garlic. Cook for 2 minutes. Stir to combine and serve on top of the fish.
